These roses are cultivated in Yunnan Province, China and are unofficially organic. In Yunnan, the roses are often fermented by the Dali Bai, an ethnic minority in Yunnan Province. Post-fermentation, the roses become tangy, slightly sour and the sugars breakdown in the petals to amplify the inherent sweetness in the rose. Fermentation also introduces subtle savory or umami-like qualities, adding a complexity to the flavor of the roses.
